Preparation
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, combine yogurt, honey, coconut oil, lemon zest, lemon juice, and vanilla extract.
- Gently add the wet mixture into the dry ingredients. Stir until just combined.
- Toss blueberries with a little flour, then gently fold them into the dough.
- Turn dough out onto a floured surface, and shape it lightly into a disc about 1-inch thick.
- Cut into 8 triangles and arrange them on the prepared baking sheet.
Baking
- Bake for 15–18 minutes or until golden brown.
- Let cool slightly, then serve and enjoy!
