Preparation
- Preheat your oven to 300°F (150°C).
- In a bowl, sift together the almond flour and powdered sugar.
- In a stand mixer, whip the aged egg whites until foamy, then gradually add the granulated sugar and continue whipping until stiff peaks form.
- Gently fold the almond flour mixture into the whipped egg whites using a silicone spatula until well combined.
- Fill a piping bag fitted with a round tip and pipe heart shapes onto a silicone baking mat or parchment paper.
- Let the piped macarons sit for 30 minutes to form a skin.
Baking
- Bake the macarons in the preheated oven for 15-20 minutes, rotating halfway through.
- Remove from the oven and allow to cool completely.
Assembling
- Once cooled, pair macaron shells and fill one side with your desired filling.
- Gently press another macaron shell on top to create a sandwich.
