Ingredients
  

For the Macaron Shells
  • 1 cup finely blanched almond flour Fine almond flour is key to smooth macaron shell tips.
  • 1.5 cups powdered sugar Sifted to prevent lumps.
  • 0.5 cup granulated sugar Used to stabilize egg whites.
  • 3 large aged egg whites Separate the whites from yolks at least a day in advance.
For the Filling (optional customization)
  • 1 cup buttercream frosting or ganache Fillings can be customized to suit your sweetheart's favorite flavors.

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. In a bowl, sift together the almond flour and powdered sugar.
  3. In a stand mixer, whip the aged egg whites until foamy, then gradually add the granulated sugar and continue whipping until stiff peaks form.
  4. Gently fold the almond flour mixture into the whipped egg whites using a silicone spatula until well combined.
  5. Fill a piping bag fitted with a round tip and pipe heart shapes onto a silicone baking mat or parchment paper.
  6. Let the piped macarons sit for 30 minutes to form a skin.
Baking
  1. Bake the macarons in the preheated oven for 15-20 minutes, rotating halfway through.
  2. Remove from the oven and allow to cool completely.
Assembling
  1. Once cooled, pair macaron shells and fill one side with your desired filling.
  2. Gently press another macaron shell on top to create a sandwich.
