Main Ingredients
  • 1 liter full-fat milk Cow or buffalo milk is ideal.
  • 2 tablespoons lemon juice or white vinegar Acid for curdling.
  • A pinch salt Optional, but enhances flavor.
Equipment
  • 1 cheesecloth or muslin cloth For straining.
  • 1 colander For draining curds.
  • 1 heavy-bottomed pot To heat the milk.

Method
 

Preparation
  1. Pour the milk into a heavy pot and slowly bring it to a boil over medium heat, stirring occasionally.
  2. Once bubbling, reduce heat and gradually add lemon juice or vinegar, stirring slowly.
  3. Watch the curds form within a minute or two.
  4. Turn off the heat and let it sit for 10 minutes.
  5. Pour the mixture through a cheesecloth-lined colander over a large bowl.
  6. Rinse the curds under cold water and gently squeeze out excess liquid.
  7. For firmer cheese, tie the cloth and place a weight on top for 30-60 minutes.
  8. Add salt to taste and mold into a block or crumble as needed.
