  • 1 lb kielbasa sausage Any brand will do, just don’t get the super spicy kind.
  • 2 medium sweet potatoes Typically use orange sweet potatoes.
  • 1/4 cup honey Raw honey tastes best.
  • 3 cloves garlic, minced Provides flavor.
  • 2 tbsp olive oil Prevents sticking.
  • to taste salt
  • to taste pepper
  • Assorted quick-roasting vegetables (optional) Such as bell peppers, red onions, or broccoli.

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Line a sheet pan with parchment paper or lightly oil it.
  3. Chop kielbasa and sweet potatoes into bite-sized pieces.
  4. In a bowl, toss kielbasa and sweet potatoes with honey, garlic, olive oil, salt, and pepper.
  5. Spread the mixture evenly on the prepared sheet pan without overcrowding.
Cooking
  1. Roast in the oven for about 25 minutes, shaking the pan halfway through for even cooking.
  2. Serve warm, drizzled with additional honey if desired.
