Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream the butter and granulated sugar together until light and fluffy.
- Add the eggs, lime juice, and lime zest; mix well.
- In a separate bowl, combine flour, graham cracker crumbs, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in white chocolate chips, if using.
Baking
- Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are lightly golden but centers are still slightly underbaked.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Glazing
- In a small bowl, whisk together powdered sugar and lime juice until smooth.
- Drizzle the glaze over the cooled cookies.
Notes
For a tropical twist, consider adding toasted coconut on top of the glaze. To store, keep cookies in an airtight container with a slice of bread to maintain softness.
