Ingredients
  

Cookie Dough
  • 1 cup unsalted butter, at room temperature Must be at room temperature for best results.
  • 1 cup granulated sugar Mix with lime zest to enhance flavor.
  • 2 large eggs At room temperature.
  • 2 cups all-purpose flour Provides structure to the cookies.
  • 1/2 cup graham cracker crumbs For a rustic texture reminiscent of pie crust.
  • 1 tsp baking soda Reacts with lime juice for leavening.
  • 1/4 tsp salt Enhances overall flavor.
  • 1/4 cup fresh key lime juice Freshly squeezed for the best flavor.
  • 1 tsp key lime zest Enhances the lime flavor.
  • 1/2 cup white chocolate chips Optional, for added richness.
Lime Glaze
  • 1 cup powdered sugar For the glaze base.
  • 2-3 tbsp fresh key lime juice Adjust for desired consistency.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream the butter and granulated sugar together until light and fluffy.
  3. Add the eggs, lime juice, and lime zest; mix well.
  4. In a separate bowl, combine flour, graham cracker crumbs, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in white chocolate chips, if using.
Baking
  1. Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes, or until the edges are lightly golden but centers are still slightly underbaked.
  3. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Glazing
  1. In a small bowl, whisk together powdered sugar and lime juice until smooth.
  2. Drizzle the glaze over the cooled cookies.

Notes

For a tropical twist, consider adding toasted coconut on top of the glaze. To store, keep cookies in an airtight container with a slice of bread to maintain softness.
