- Pound the chicken breasts to an even thickness for even cooking.

Cooking
- Heat olive oil in a cast iron skillet over medium-high heat.
- Add the chicken breasts and sear for 5-7 minutes on each side until golden brown and cooked through.
- Once the chicken is done, remove it from the skillet and let it rest.
- In the same skillet, reduce heat to medium and add butter and minced garlic. Cook for about 1 minute until fragrant.
- Add lemon juice and zest to the skillet, scraping up any browned bits from the bottom.
- Return the chicken to the skillet and spoon the sauce over it.

- Serve the chicken with your choice of sides like rice, quinoa, or roasted vegetables.
