  • 4 pieces boneless, skinless chicken breasts Pounded to an even thickness for even cooking
  • 2 tablespoons olive oil For high-heat searing
  • 2 tablespoons butter For the sauce
  • 4 cloves garlic, minced Add at the last minute to avoid burning
  • 1 large lemon, zested and juiced Fresh lemon for vibrant flavor
  • 1 teaspoon dried oregano For flavor enhancement

  • 2 cups baby potatoes, par-boiled and tossed in sauce Hearty addition

Method
 

Preparation
  1. Pound the chicken breasts to an even thickness for even cooking.
  2. Season the chicken breasts with salt, pepper, oregano, and thyme.
Cooking
  1. Heat olive oil in a cast iron skillet over medium-high heat.
  2. Add the chicken breasts and sear for 5-7 minutes on each side until golden brown and cooked through.
  3. Once the chicken is done, remove it from the skillet and let it rest.
  4. In the same skillet, reduce heat to medium and add butter and minced garlic. Cook for about 1 minute until fragrant.
  5. Add lemon juice and zest to the skillet, scraping up any browned bits from the bottom.
  6. Return the chicken to the skillet and spoon the sauce over it.
Serving
  1. Serve the chicken with your choice of sides like rice, quinoa, or roasted vegetables.

Notes

Ensure to let the chicken rest for at least five minutes before slicing. This recipe can be customized with different vegetables or sides.
