  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch for softness
  • 1/2 teaspoon salt enhances flavor
Wet Ingredients
  • 1/2 cup unsalted butter softened
  • 1/2 cup cream cheese adds richness
  • 1 cup brown sugar for moisture
  • 1/2 cup granulated sugar
  • 1 large egg at room temperature
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest massage into sugar for flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the softened butter, cream cheese, brown sugar, and granulated sugar until creamy.
  3. Add the egg, lemon juice, and lemon zest, and mix until well combined.
  4. In another bowl, whisk together the flour, baking powder, cornstarch, and salt.
  5. Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
Chilling & Baking
  1. Chill the dough for at least 30 minutes.
  2. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving space for spreading.
  3. Bake in the preheated oven for 10-12 minutes or until the edges are slightly golden but the centers look underdone.
  4. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container with a slice of bread to keep them soft. Freezing the dough allows for quick treats anytime.
