Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix the softened butter, cream cheese, brown sugar, and granulated sugar until creamy.
- Add the egg, lemon juice, and lemon zest, and mix until well combined.
- In another bowl, whisk together the flour, baking powder, cornstarch, and salt.
- Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
Chilling & Baking
- Chill the dough for at least 30 minutes.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving space for spreading.
- Bake in the preheated oven for 10-12 minutes or until the edges are slightly golden but the centers look underdone.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container with a slice of bread to keep them soft. Freezing the dough allows for quick treats anytime.
