  • 1 clove garlic Grated into a paste for smoothness.
  • 1/4 cup ice-cold water To emulsify the sauce and achieve fluffiness.
  • Salt to taste salt Adjust according to preference.
Optional Flavorings
  • 1 tablespoon maple syrup or honey To balance acidity if needed.
  • 1 pinch cayenne pepper or smoked paprika For those who like a bit of heat.
  • 1/4 cup fresh herbs (parsley, cilantro, or dill) For added freshness.

Preparation
  1. In a bowl, combine the tahini, fresh lemon juice, and grated garlic.
  2. Whisk until the mixture becomes creamy.
  3. Gradually add ice-cold water while whisking to achieve a smooth texture.
  4. Add salt to taste.
  5. If using optional flavorings, incorporate them at this stage.

Notes

Store in an airtight container in the fridge for up to one week. If it thickens, stir in a little water to restore consistency. Suitable for freezing in small portions.
