  • 1 cup all-purpose flour 120g
  • ½ cup granulated sugar 100g
  • ½ teaspoon baking powder
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 zest of lemon (optional)
  • 6 tablespoons unsalted butter, melted 85g
  • ¼ cup heavy cream 60ml
  • a pinch of salt

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk the eggs, then add vanilla extract, melted butter, and heavy cream.
  4. Combine the wet and dry ingredients gently.
  5. Fill madeleine molds and bake for 8-10 minutes until golden.
  6. Let cool and dust with powdered sugar before serving.

Notes

Chill the batter for at least an hour before baking for the best texture. Experiment with flavors by adding cocoa powder, citrus zest, or nuts.
