Maple-Oatmeal Scones

Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Nothing fancy, just your regular bag
  • 1 cup old-fashioned oats Quick oats can work, but texture is better with the chunky kind
  • 2 teaspoons baking powder Gives it that lovely lift
  • 1/4 cup brown sugar Gives the best cozy vibes
  • 1/2 teaspoon salt Small pinch for flavor
Wet Ingredients
  • 1/2 cup cold butter, chopped Chopped up so it mixes nicely
  • 1/2 cup maple syrup Real stuff, if you can swing it
  • 1/2 cup milk Regular dairy or non-dairy works too
  • 1 large egg Helps it all stick together
Optional Ingredients
  • 1/2 cup chopped pecans or walnuts Optional, but go for it

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix together flour, oats, baking powder, brown sugar, and salt.
  3. Add the cold butter and mix until crumbly.
  4. In another bowl, whisk together the maple syrup, milk, and egg, then stir into the dry ingredients until just combined.
  5. If using, stir in the nuts.
  6. Dump the dough onto a floured surface and pat it into a 1-inch thick circle.
Baking
  1. Cut into wedges and transfer to the baking sheet.
  2. Bake for 15-18 minutes until golden and fragrant.
  3. Allow to cool slightly before serving.

Notes

Serve warm with butter or maple syrup. These scones are also great for freezing.
