  • 1 lb chicken breast Boneless and skinless
  • 1 Tbsp sun-dried tomato oil Use from the jar of sun-dried tomatoes
For the Orzo
  • 1 cup orzo pasta Toasted before adding liquid
  • 2 cups chicken broth Can substitute with vegetable broth
  • 1 cup heavy cream Or double cream for extra richness
For the Sauce
  • 1 cup parmesan cheese Freshly grated for smoother texture
  • 1 cup sun-dried tomatoes Chopped
  • 2 cloves garlic Minced
  • 1 tsp dried oregano Can be fresh for better flavor
  • 1 cup fresh basil For garnish and added flavor

Method
 

Preparation
  1. Heat the sun-dried tomato oil in a large pot over medium heat.
  2. Add the chicken breast and cook until browned, about 5-7 minutes on each side.
  3. Remove the chicken from the pot, and let it rest before slicing.
Cooking Orzo
  1. In the same pot, add the minced garlic and toast for 30 seconds until fragrant.
  2. Add the orzo pasta and toast for about 2 minutes.
  3. Pour in the chicken broth and heavy cream, stirring well to combine.
  4. Bring to a simmer, then reduce heat and cover. Cook for about 10-12 minutes, stirring frequently.
Final Touches
  1. Stir in chopped sun-dried tomatoes, dried oregano, and return the chicken to the pot.
  2. Stir in the grated parmesan cheese until melted and creamy.
  3. Serve garnished with fresh basil.

Notes

Leftover Marry Me Chicken Orzo can be reheated with a splash of broth to regain its creaminess. Store in an airtight container in the fridge for up to 4 days.
