  • 1 medium cucumber Sliced
  • 100 grams feta cheese Crumbled
  • 4 tablespoons extra virgin olive oil For drizzling
  • 1 handful fresh herbs (oregano, mint, parsley) Chopped
Whole Grains and Dairy
  • 4 slices whole-wheat bread Toasting optional
  • 200 grams Greek yogurt Strained
  • 2 slices halloumi cheese Grilled or fried
Fruits and Extras
  • 4 pieces figs Fresh
  • 200 grams ga grapes Fresh or dried
  • 2 tablespoons honey For drizzling
  • 1 cup hummus For dipping

Method
 

Preparation
  1. Chop the ripe tomatoes and cucumber. Slice the figs and grapes.
  2. Toast the whole-wheat bread, if desired.
  3. Drizzle olive oil and sprinkle chopped herbs over the chopped tomatoes and cucumber.
Assembly
  1. On a plate, arrange the toasted bread, Greek yogurt, figs, grapes, and halloumi cheese.
  2. Add a small bowl of hummus for dipping.
  3. Garnish with honey drizzled over the figs and a sprinkle of herbs.
