Preparation
- Preheat oven to 375°F (190°C).
- Grease a 9x13-inch casserole dish with butter or cooking spray.
- Cook the sausage until browned and fully cooked. Drain excess grease.
- Spread sausage evenly across the bottom of the casserole dish.
- Pour prepared pancake batter over the sausage layer.
- In a separate bowl, whisk together eggs, milk, maple syrup, salt, and pepper.
- Pour egg mixture on top of the pancake layer.
- Sprinkle cheese if using.
- Bake uncovered for 30–35 minutes or until the center is set and the top is golden brown.
- Let it rest for 5–10 minutes before slicing.
