- Blend Base: In a food processor, combine dates, peanut butter, oats, chia seeds, flaxseed, vanilla, and salt. Process until the mixture forms a sticky dough.
- Roll: Scoop about 1 tablespoon of the mixture and roll into bite-sized balls or mini logs.
- Coat (Optional): Roll each piece in crushed peanuts or coconut flakes for extra texture and flavor.
- Chill & Store: Place on a tray and chill in the fridge for 20 minutes. Store in an airtight container in the fridge for up to 1 week.
