Preparation
- Preheat the Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Prepare the Halibut: Pat the halibut fillets dry with a paper towel. Brush them lightly with olive oil, then coat with Dijon mustard and lemon juice for added flavor.
- Make the Pistachio Crust: In a small bowl, combine the finely chopped pistachios, panko breadcrumbs, garlic powder, paprika, salt, and melted butter. Mix until well combined.
Cooking
- Coat the Halibut: Press the pistachio mixture onto the top of each halibut fillet, ensuring an even and generous coating.
- Bake: Place the coated fillets on the prepared baking sheet. Bake for 12-15 minutes, or until the crust is golden brown and the fish flakes easily with a fork.
- Serve: Plate the halibut with roasted broccolini and a lemon wedge for a fresh, vibrant finish.
Notes
For an extra crispy texture, broil the fish for the last 2 minutes of cooking.
