  • 2 fillets halibut fillets (6-8 oz each)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
For the Pistachio Crust
  • 0.5 cup pistachios, finely chopped
  • 2 tablespoons panko breadcrumbs
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 1 tablespoon melted butter

Method
 

Preparation
  1. Preheat the Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the Halibut: Pat the halibut fillets dry with a paper towel. Brush them lightly with olive oil, then coat with Dijon mustard and lemon juice for added flavor.
  3. Make the Pistachio Crust: In a small bowl, combine the finely chopped pistachios, panko breadcrumbs, garlic powder, paprika, salt, and melted butter. Mix until well combined.
Cooking
  1. Coat the Halibut: Press the pistachio mixture onto the top of each halibut fillet, ensuring an even and generous coating.
  2. Bake: Place the coated fillets on the prepared baking sheet. Bake for 12-15 minutes, or until the crust is golden brown and the fish flakes easily with a fork.
  3. Serve: Plate the halibut with roasted broccolini and a lemon wedge for a fresh, vibrant finish.

Notes

For an extra crispy texture, broil the fish for the last 2 minutes of cooking.
