  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup butter, softened Use room temperature butter for best results.
  • 1 large egg
  • 1 tablespoon grapefruit zest Use fresh zest for aroma.
  • 1/2 cup freeze-dried raspberry powder This replaces fresh raspberries to avoid sogginess.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
For the Passionfruit Glaze
  • 1 cup powdered sugar Sift before mixing to avoid lumps.
  • 2 tablespoons passionfruit pulp Fresh or canned.
  • 1 tablespoon agave syrup Can substitute with honey.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and grapefruit zest until well combined.
  4. In a separate bowl, mix together the flour, freeze-dried raspberry powder, baking soda, and salt.
  5. Gradually blend the dry ingredients into the wet mixture until a dough forms.
  6. Chill the dough for at least 30 minutes.
Baking
  1. Scoop tablespoons of dough onto a baking sheet, spacing them apart.
  2. Bake for 10-12 minutes or until the edges are golden.
  3. Let cookies cool completely on a wire rack.
Glazing
  1. For the glaze, whisk the sifted powdered sugar, passionfruit pulp, and agave syrup until smooth.
  2. Once cookies are cooled, drizzle the glaze over the top.

Notes

For a unique touch, garnish the cookies with edible flowers or additional grapefruit zest. Packaging them in clear cellophane bags makes for perfect spring gifts.
