  • 1 cup unsalted butter, room temperature Should be soft but not melted.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rose water Start with this amount to avoid overpowering floral flavor.
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt Flaky sea salt recommended for topping.
  • 1 cup semi-sweet chocolate chips Aim for 55-60% cocoa.
  • 1/4 cup edible rose petals, dried Ensure they are high quality and free from chemicals.
  • 1/4 cup chopped pistachios For addition of crunch and flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together the room-temperature butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add in the egg, vanilla extract, and rose water, mixing until well combined.
  4. In a separate bowl, combine flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips, dried rose petals, and chopped pistachios.
Baking
  1. Scoop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are golden and the centers look slightly underdone.
  3. Remove from oven and let cool, gently pressing additional rose petals into the cookies while still warm.
  4. Allow cookies to cool completely on a wire rack before storing.

Notes

Chilling the dough for at least 30 minutes prior to baking will improve texture.
