  • 1 lb lean ground turkey or beef
  • 6 large egg whites (or 4 whole eggs)
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 1/4 cup unsweetened almond milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 whole wheat tortillas
  • Fresh spinach or kale for added nutrients Optional

Preparation
  1. In a skillet over medium heat, cook the lean ground turkey or beef until browned and cooked through. Drain any excess fat if necessary.
  2. In a bowl, whisk together the egg whites (or whole eggs), almond milk, salt, and black pepper until well combined.
  3. Pour the egg mixture into the skillet with the cooked meat and scramble until the eggs are fully cooked and fluffy.
  4. Stir in the shredded cheese until melted and well mixed.
  5. Lay a whole wheat tortilla flat and add a layer of fresh spinach or kale, then spoon the sausage and egg mixture onto the center.
  6. Roll up the tortilla tightly, folding the sides in as you go to secure the filling.
  7. Repeat with the remaining tortillas and serve warm for a delicious and healthy breakfast!

Notes

These roll-ups are great for meal prep and can be stored in an airtight container for up to 3 days. You can also add other vegetables like bell peppers or onions for more flavor. Use different types of cheese if you like, such as mozzarella or pepper jack.
