- In a skillet over medium heat, cook the lean ground turkey or beef until browned and cooked through. Drain any excess fat if necessary.
- In a bowl, whisk together the egg whites (or whole eggs), almond milk, salt, and black pepper until well combined.
- Pour the egg mixture into the skillet with the cooked meat and scramble until the eggs are fully cooked and fluffy.
- Stir in the shredded cheese until melted and well mixed.
- Lay a whole wheat tortilla flat and add a layer of fresh spinach or kale, then spoon the sausage and egg mixture onto the center.
- Roll up the tortilla tightly, folding the sides in as you go to secure the filling.
- Repeat with the remaining tortillas and serve warm for a delicious and healthy breakfast!
Notes
These roll-ups are great for meal prep and can be stored in an airtight container for up to 3 days. You can also add other vegetables like bell peppers or onions for more flavor. Use different types of cheese if you like, such as mozzarella or pepper jack.
