Preparation
- In a large pot, bring salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, in a frying pan, sauté the pancetta over medium heat until it becomes crispy.
- In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Combining
- Once the pasta is cooked, reserve 1 cup of the pasta water, then drain the pasta.
- Add the hot pasta to the frying pan with the pancetta, and remove it from the heat.
- Quickly pour the egg and cheese mixture over the pasta while tossing to create a creamy sauce, adding reserved pasta water as needed.
Notes
Serve immediately with additional grated Parmesan and black pepper. This dish does not reheat well, so it's best enjoyed fresh.
