  • 2-3 pieces very ripe bananas, the spottier the better
  • 1 cup chopped fresh strawberries or thawed frozen strawberries
  • 2 pieces eggs (room temp)
  • 1/3 cup melted butter or coconut oil
  • 3/4 cup sugar can use less if desired
  • 1 and 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 pinch salt
  • 1/2 tsp vanilla (optional) can be omitted
  • 1 dash cinnamon (optional)
  • nuts or chocolate chips (optional) for added texture

Method
 

Preparation
  1. Mash the bananas in a large bowl.
  2. Add eggs, melted butter, and sugar; mix well.
  3. Stir in flour, baking soda, and salt until just combined.
  4. Gently fold in strawberries and any optional ingredients.
Baking
  1. Pour the batter into a greased loaf pan.
  2. Bake at 350°F (175°C) for 50-60 minutes.
  3. Check with a toothpick; it should come out with just crumbs.
  4. Let cool slightly before slicing.

Notes

This banana bread is perfect for breakfast or as a snack. It can be enjoyed fresh out of the oven or toasted the next day with peanut butter.
