Dressing

Method
 

Preparation
  1. Wash and dry the spring mix and wrap in paper towels to keep crisp.
  2. Thinly slice red onions and soak them in ice water for 10 minutes.
  3. If using raw almonds, toast them in a pan until golden.
Dressing
  1. In a bowl, combine mayonnaise (or Greek yogurt), poppy seeds, apple cider vinegar, and sugar. Whisk together until smooth.
Assembly
  1. Combine spring mix, strawberries, feta, red onions, candied pecans (or toasted almonds), and dried cranberries in a large salad bowl.
  2. Drizzle dressing over the salad just before serving and toss gently.
