Ingredients
  

Citrusy Shredded Chicken
  • 4 pieces Chicken breasts
  • 1/2 cup Fresh lime juice
  • 3 cloves Garlic, minced
  • 1 cup Salsa
  • 1 teaspoon Cumin
Summer Veggie Chili
  • 1 cup Bell peppers, chopped
  • 1 medium Zucchini, chopped
  • 2 cans Black beans, drained and rinsed
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
Slow Cooker Fajitas
  • 1 pound Sliced steak or chicken
  • 1 bag Frozen pepper strips
  • 2 tablespoons Taco seasoning
  • 1 juice Lime
White Bean Chili
  • 2 cans Canned white beans, drained
  • 1 cup Corn Canned or frozen
  • 1 cup Greek yogurt Stirred in at the end
Lemon-Garlic Shrimp
  • 1 pound Frozen shrimp
  • 1 bag Frozen corn
  • 1 cup Fresh lemon juice
  • 3 cloves Chopped garlic
BBQ Peach Meatballs
  • 1 package Frozen meatballs Store-bought
  • 1 cup BBQ sauce
  • 1 cup Peach preserves For sweetness

Method
 

Citrusy Shredded Chicken
  1. Combine chicken breasts, lime juice, minced garlic, salsa, and cumin in the slow cooker.
  2. Cook on low for 6 hours.
  3. Shred and serve.
  4. Place shoulder in slow cooker.
  5. Add pineapple chunks and BBQ sauce.
  6. Cook on low for 6 hours.
  7. Shred and serve on Hawaiian rolls.
Summer Veggie Chili
  1. Add bell peppers, zucchini, black beans, cumin, and chili powder to the slow cooker.
  2. Cook on low for 6 hours.
Slow Cooker Fajitas
  1. Add sliced steak/chicken, frozen pepper strips, taco seasoning, and lime juice in the slow cooker.
  2. Cook on low for 6 hours.
White Bean Chili
  1. Mix white beans, corn, and any desired spices in the slow cooker.
  2. Cook on low for 6 hours before adding Greek yogurt.
Lemon-Garlic Shrimp
  1. Combine frozen shrimp, frozen corn, lemon juice, and garlic in the slow cooker.
  2. Cook on low for 4 hours.
BBQ Peach Meatballs
  1. Add frozen meatballs, BBQ sauce, and peach preserves in the slow cooker.
  2. Cook on low for 4 hours.

Notes

Try adding fresh cucumber and tomatoes just before serving to make the meals even more refreshing. Adjust cooking times based on slow cooker efficiency.
