For the shortcrust pastry
  • 2 cups all-purpose flour Basic flour for the crust.
  • 1/2 cup cold vegan butter Use a trusted brand.
  • 1 teaspoon salt Essential for flavor.
  • 2-4 tablespoons cold water Add gradually until the dough comes together.
For the filling
  • 4-5 medium apples Granny Smith or any firm, tart variety.
  • 2 tablespoons lemon juice Prevents apples from browning.
  • 1 teaspoon cinnamon Optional, for warmth.
  • 1/4 cup sugar Adjust according to apple tartness.
  • 1 tablespoon apricot or apple jam For a glossy finish.
  • 1/4 cup chopped nuts Optional topping, like pecans.

Method
 

Preparing the shortcrust pastry
  1. In a mixing bowl, combine the flour and salt.
  2. Cube the cold vegan butter and rub it in until the mixture resembles sandy crumbles.
  3. Add cold water gradually and mix with your hands until the dough comes together.
  4. Shape the dough into a disc, wrap in cling film, and chill for at least 30 minutes.
Assembling the vegan apple tart
  1. Roll out the chilled pastry to fit your tart tin and drape it in the tin.
  2. Snip away excess edges and prick the bottom with a fork.
  3. Mix apple slices with lemon juice and optionally with cinnamon-sugar.
  4. Arrange the apple slices in the tart shell and bake at 375°F (190°C) for 35-45 minutes.
  5. Brush the tart with warm jam once out of the oven for extra gloss.
  6. Let cool, slice, and serve.

Notes

Serve with dairy-free vanilla ice cream or top with vegan yogurt for an extra treat. Feel free to experiment with other fruits like pears or berries.
