Delicious vegan berry crumble bars that are easy to make and perfect for breakfast or dessert, packed with mixed berries and a chewy oat crust.

Ingredients
  

Crust and Crumble Mixture
  • 2 cups Rolled oats Do not use instant oats.
  • 1 cup Flour (regular or whole wheat) You can also use spelt or gluten-free blend.
  • 1/2 cup Brown sugar Coconut sugar works as a substitute.
  • 1/2 cup Coconut oil Melted vegan butter or avocado oil are also acceptable.
  • 1/2 cup Maple syrup Agave syrup can be used, but honey is not vegan.
  • 1 tablespoon Lemon juice Adjust to taste but avoid overloading.
  • 2 tablespoons Cornstarch Helps thicken the fruit.
Filling
  • 3 cups Mixed berries (frozen or fresh) Use any combination of berries available.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a large bowl, combine rolled oats, flour, and brown sugar.
  3. Melt the coconut oil and drizzle it into the bowl, then add the maple syrup and mix by hand until the mixture is clumpy, resembling damp sand.
  4. Set aside about 1 cup of this mixture for the crumble. Press the remaining mixture firmly into the bottom of the prepared pan.
  5. Spread the mixed berries evenly on top of the crust.
  6. Sprinkle the cornstarch over the berries and drizzle the lemon juice on top.
  7. Crumble the reserved oat mixture over the berries.
Baking
  1. Bake in the preheated oven for about 35 minutes, or until the top is golden and bubbly.
  2. Allow to cool for at least 30 minutes before slicing.

Notes

These bars improve in flavor after a day. Store them in the fridge for best results. Press the crust firmly and always use parchment paper to prevent sticking. Feel free to taste the crumble before baking.
