  • 1 medium ripe avocado Mashed for creaminess

  • 1 tsp cumin Toasted for depth
  • 1 tsp coriander Toasted for flavor
  • ½ cup red onion Chopped for crunch
Wrap Ingredients
  • 2 large whole wheat tortillas For wrapping the filling
  • 1 cup fresh spinach Used as a moisture barrier

Method
 

Preparation
  1. In a mixing bowl, mash the chickpeas and avocado together until combined but still chunky.
  2. Stir in the lemon juice, chopped herbs, cumin, coriander, and red onion.
Assembly
  1. Lay down a leaf of spinach on each tortilla to create a moisture barrier.
  2. Spread the filling mixture evenly between the two tortillas.
  3. Wrap tightly and slice in half to serve.
