Method
Dough Preparation
- In a large bowl, mix warm plant milk with sugar and yeast. Allow to sit until bubbles form, about 5-10 minutes.
- Add flour, softened vegan butter, and salt to the yeast mixture. Mix until well combined.
- Knead the dough for about 5-7 minutes until soft and elastic.
- Cover the bowl with a clean towel and let the dough rise in a warm place until it has doubled in size, about 1 hour.
Filling and Baking
- Roll the risen dough onto a floured surface into a rectangle about 1/4 inch thick.
- Spread softened vegan butter over the dough, then sprinkle brown sugar and cinnamon evenly over the surface.
- Starting from one edge, roll the dough tightly into a log.
- Slice the log into 12 equal pieces and place them in a greased baking dish.
- Let the rolls rise for an additional 30 minutes.
- Preheat the oven to 350°F (175°C) and bake the rolls for 25-30 minutes until golden.
Glazing
- While the rolls are baking, prepare the glaze by whisking together plant milk, powdered sugar, and optional vegan butter in a bowl.
- Once the rolls are done baking, remove them from the oven and drizzle the glaze over the warm rolls.
Notes
To store, keep cooled rolls in an airtight container for up to 4 days in the fridge, or freeze individually wrapped for a month. Reheat in the microwave for softness.
