Main Ingredients
  • 500 g cooked chicken breast (shredded or diced)
  • 150 g fat-free Greek yogurt (or low-fat natural yogurt)
  • 2 tbsp light mayonnaise (optional for extra creaminess) Optional ingredient
  • 1 tbsp mild curry powder
  • 1 tbsp low-sugar mango chutney Low-sugar or sugar-free version recommended
  • 2 tbsp sultanas or raisins Optional ingredient
  • 1 tbsp lemon juice
  • 1 tsp turmeric For added color and anti-inflammatory benefits
  • to taste Salt and black pepper To taste
  • Fresh coriander For garnish
Optional Additions
  • 1 small apple (diced) For added crunch
  • 1 handful flaked almonds For texture
  • 1 handful fresh spinach or arugula For serving

Method
 

Cooking Chicken
  1. Poach fresh chicken in seasoned water for 15-20 minutes until fully cooked or use leftover roast chicken. Shred or dice the chicken into bite-sized pieces.
Preparing the Sauce
  1. In a mixing bowl, combine Greek yogurt, light mayonnaise (if using), curry powder, mango chutney, turmeric, and lemon juice. Stir until smooth and creamy.
Mixing Ingredients
  1. Add the cooked chicken to the sauce and stir well to coat. If using optional ingredients like diced apple, sultanas, or flaked almonds, mix them in at this stage.
Seasoning
  1. Add salt and black pepper to taste. Optionally, sprinkle fresh coriander or parsley for added flavor.
Serving
  1. Serve as a filling for sandwiches, wraps, or jacket potatoes, or as part of a healthy salad with mixed greens.

Notes

This dish is high in protein and can be adapted for meal prep. It stores well in the fridge for up to 3 days.
