Cooking Chicken
- Poach fresh chicken in seasoned water for 15-20 minutes until fully cooked or use leftover roast chicken. Shred or dice the chicken into bite-sized pieces.

- In a mixing bowl, combine Greek yogurt, light mayonnaise (if using), curry powder, mango chutney, turmeric, and lemon juice. Stir until smooth and creamy.
Mixing Ingredients
- Add the cooked chicken to the sauce and stir well to coat. If using optional ingredients like diced apple, sultanas, or flaked almonds, mix them in at this stage.
Seasoning
- Add salt and black pepper to taste. Optionally, sprinkle fresh coriander or parsley for added flavor.
Serving
- Serve as a filling for sandwiches, wraps, or jacket potatoes, or as part of a healthy salad with mixed greens.
