  • 400 g spaghetti Choose high-quality spaghetti for the best results.
  • 150 g pancetta Cut into small cubes.
  • 3 large eggs Use fresh eggs for better flavor.
  • 100 g Parmesan cheese Grated.
  • 1 tsp black pepper Freshly cracked pepper is preferred.

Preparation
  1. In a large pot, bring salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, in a frying pan, sauté the pancetta over medium heat until it becomes crispy.
  3. In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Combining
  1. Once the pasta is cooked, reserve 1 cup of the pasta water, then drain the pasta.
  2. Add the hot pasta to the frying pan with the pancetta, and remove it from the heat.
  3. Quickly pour the egg and cheese mixture over the pasta while tossing to create a creamy sauce, adding reserved pasta water as needed.

Notes

Serve immediately with additional grated Parmesan and black pepper. This dish does not reheat well, so it's best enjoyed fresh.
